Once dedicated labor is counted honestly, bottled pulls ahead on BOTH fruits. This is the number most “just squeeze your own” advice conveniently leaves out - and it’s the whole reason PART 03. exists.

The numbers above assume dedicated bar labor and a jug of juice as the only output. Neither has to be true. Here’s what separates a program that just squeezes citrus from one that RUNS IT RIGHT.
01. A TRUE MARRIAGE BETWEEN KITCHEN & BAR
If prep staff are already on the clock, adding citrus juicing to their list doesn’t add a new cost to the bar’s COGS - IT USES TIME THAT’S ALREADY BEEN PAID FOR. This is where the chef becomes key: the kitchen chef should be a huge part of any serious beverage program, not a department squeezing out its own labor line.
02. THERE IS NO SUCH THING AS WASTE
Nothing about a squeezed lime or lemon is trash. Peels become oleo saccharum. Pulp becomes fruit leather, candy, and house sour mix. Every part of the fruit is utilized to feed your bar - and bottled juice could never give you any of that.

THE FREEZER, NOT THE FRIDGE
Fresh juice doesn’t hold at bottled juice shelf life. The practical fix is freezing immediately after squeezing rather than refrigerating. It’s not perfect - there’s always some quality dropoff the moment juice is extracted, fresh or bottled. but it’s the realistic middle ground for a high volume bar that can’t juice to order every single pour.

RUNNING IT LIKE A WELL-OILED MACHINE
The other piece that operators get right is the operation itself. Run a fresh squeezed program long enough, and the team develops a real sense of daily usage. Here’s the freezer-to-cooler SOP that keeps it consistent EVERY SHIFT.
01. FIRST IN, FIRST OUT
Oldest frozen juice gets pulled first and used first, every time - no exceptions and no guessing which batch is the oldest (labeling & dating is a NON NEGOTIABLE).
02. PULL THE NIGHT BEFORE
The juice needed for the next day comes out of the freezer the night before and moves to the cooler to thaw slowly and safely.
03. READY BEFORE THE SHIFT STARTS
By the time the bar prep team clocks in, thawed juice is sitting in the cooler - ready to go. NO SCRAMBLING, NO EXCUSES, NO JUICE RUSHED STRAIGHT FROM FROZEN.

FRESH SQUEEZED JUICE ISN’T ALWAYS CHEAPER - THE RAW MATH IS CLOSE, AND CAN EVEN RUN MORE EXPENSIVE ONCE LABOR IS COUNTED HONESTLY. BUT OPERATORS WHO FOLD JUICING INTO EXISTING LABOR, PUT THE PULP AND THE PEELS TO WORK, AND RUN A FREEZER -TO - COOLER SYSTEM AREN’T JUST CLOSING THAT GAP.
